 This Zesty Mexican Shrimp Ceviche Cocktail is the perfect blend of succulent shrimp, crisp cucumber, and creamy avocado in a spicy, tangy Clamato base.

​The Seafood & Produce:

​1 lb Shrimp (peeled, deveined, and cooked)

​1 Large Cucumber (peeled and diced)

​1 Avocado (diced)

​1/2 Red Onion (finely chopped)

​1 Serrano pepper (minced, seeds removed for less heat)

​1 Jalapeño (minced)

​1 stick Celery (diced, plus extra stalks for garnish)

​1/2 cup Fresh Cilantro (chopped)

​2 Lemons (juiced)

​The Liquid Base:

​1 cup Clamato juice

​1/2 cup Cocktail sauce

​Cholula Hot Sauce (to taste)

​Salt and Pepper (to taste)

​Prepare the Shrimp: If using raw shrimp, poach them in boiling water for 2–3 minutes until pink, then immediately plunge into an ice bath. Once cooled, chop them into bite-sized pieces (keep a few whole for garnish).

​The Marinate: In a large glass bowl, combine the shrimp, diced onion, and lemon juice. Let this sit for about 10 minutes; the acidity helps "brighten" the shrimp and mellows the raw onion.

​Mix the Base: Stir in the Clamato, cocktail sauce, and as much Cholula as you can handle.

​Fold in Veggies: Gently add the cucumber, celery, serrano, and jalapeño. Fold in the avocado and cilantro last to ensure the avocado doesn't get mashed.

​Season: Add salt and pepper. Taste and adjust—add more lemon for tang or cocktail sauce for sweetness.

​Chill: Cover and refrigerate for at least 30 minutes. Ceviche is best served ice-cold.

​Serve: Pour into a chilled goblet. Garnish with a celery stalk, a lemon wheel, and a few whole shrimp on the rim.



Tips for Success


​Texture: Dice your cucumbers and onions to a similar size so you get a bit of everything in every spoonful.

​The Crunch: Using both celery and cucumber provides two different levels of "crunch" which makes the texture more interesting.

Serving: Serve with saltine crackers or thick corn tostadas.
