Citrus & Grape Roasted Duck

​A festive, flavorful roast that uses fruit to balance the richness of the duck.


​Ingredients


​1 Whole Duck (approx. 5–6 lbs), thawed and patted completely dry

​1 Large Orange (half sliced into rounds for the top, half for juicing)

​1 cup Red Seedless Grapes

​4 tbsp Unsalted Butter (at room temperature)

​Fresh Herbs: 3 sprigs of Rosemary and 3 sprigs of Thyme

​Seasoning: 2 tsp Sea salt, 1 tsp Cracked black pepper, ½ tsp Garlic powder


​

Instructions


​Prep the Duck: Preheat your oven to 350°F (175°C). Use a sharp knife or a needle to lightly prick the skin of the duck all over (especially the breast and legs). Note: Do not pierce the meat; this helps the fat render out for crispy skin.

​

Seasoning & Stuffing:


Season the cavity of the duck with salt and pepper. Stuff it with half of the grapes and a few sprigs of rosemary and thyme.


​The "Delicious" Toppings:


Place the duck in a roasting pan or a deep ceramic dish. Rub the softened butter generously over the skin. Sprinkle with the salt, pepper, and garlic powder. Arrange the orange slices and the remaining grapes on and around the duck as shown in your image.


​The Roast:


Place the duck in the oven. Roast for approximately 20 minutes per pound.


​Basting:


Every 30 minutes, carefully spoon the rendered fat and juices back over the duck. If the orange slices begin to char too quickly, you can tent them with a small piece of foil.

​

The Finish:


The duck is done when the internal temperature reaches 165°F (74°C) in the thickest part of the thigh. For extra crispy skin, turn the oven up to 425°F (220°C) for the last 10 minutes of cooking.


​Resting:


Remove from the oven and let the duck rest for at least 15 minutes before carving. This allows the juices to redistribute, making the meat tender.

Chef’s Tip

​Save the rendered duck fat from the bottom of the pan! It is "liquid gold" and can be stored in the fridge to make the best roasted potatoes you’ve ever had.
